Awhile ago, I saw on Mary Ellen’s Cooking Creations this recipe. I saved it but never made it. Then a few months ago I saw a similar recipe in Family Circle Magazine for a Sausage & Broccoli Ramen Dish. Again, I cut it out, saved it but hadn’t used it yet.So last week when I was doing my menu planning for this week, I came across this recipe again and figured it’s a good light easy dinner recipe. I wanted to change it somewhat, so we had some thin cut pork chops in the refrigerator. I cut them into chunks and used them as my base. Then I picked some fresh broccoli from our garden! We added some soy sauce to taste to make it a bit more flavorful. This recipe makes 4 servings and has about 372 calories per serving. It is very easy to put together and took a total of 20 minutes.
Ingredients:
3 packages, 3 ounces each ramen noodle soups, chicken flavor
1/4 cup reduced fat sour cream
1 tablespoon of cornstarch
4 small thin pork chops, cut into chunks
3 cups broccoli florets
1 cup of water
Directions:
- Bring a large pot of salted water to a boil. Cook noodles for 2 minutes, reserving seasoning packets for later; drain and set aside. In a small bowl, stir together sour cream and cornstarch; set aside.
- Cook pork in a large non stick skillet over medium heat, for about 4 minutes or until cooked through.
- Add broccoli, 1 cup of water and 1 1/2 teaspoons of ramen chicken seasoning to skillet. Cover and shimmer over medium heat for 3 minutes or until broccoli is cooked.
- Remove cover and stir sour cream mixture into skillet. Cook for 1 minute or until sauce is thick. Add noddles to skillet and toss to coat with sauce. Serve!
